What I Cooked: Pt. Six

This week consisted more of left overs nights and big salads - light on the cooking week. But these are 2 recipes that did get made!

Smoked Tofu Fried Rice
I stumbled across this recipe when I was searching Pinterest for recipes to use up some smoked tofu we had on hand. Anything with rice is always a guaranteed win with my girls and this one was no different. Absolutely delicious and hearty on its own - we served with edamame and chopped raw veg for an easy, quick meal.
As always, adjust the ingredients to fit what you have on hand. Baby spinach and chopped cashews were a delicious addition.

The Best Vegetarian Chili
Everyone claims they have the ‘best’ chili recipe but I’m not kidding when I say NONE of them live up to this one. This is the only one you will ever need.
Swap in quinoa for the couscous for added protein, use a mix of whatever beans your family likes best and omit the brown sugar - it is completely unnecessary - but do not skip the cocoa powder (swap for cacao if you have).
Serve topped with avocado, shredded lettuce, vegan cheese shreds and hot sauce!
This recipe makes quite a bit but freezes amazingly - if you have a big enough pot double it for even more freezer meals!
